Breakfast Sweet Potatoes

4 sweet potatoes, peeled and cubed

1/2 large onion, diced

1/2 green pepper, diced

1/2 red pepper, diced

Salt & Pepper

Extra Virgin Olive Oil (EVOO)

1 tbl Chopped Parsley (optional)

Preheat oven 450. Toss all the vegetables into a bowl and coat with EVOO and Salt/Pepper. Place onto a baking sheet. Bake for 30 minutes, flipping once through. Sprinkle with freshly chopped parsley. Enjoy!
