
6 Yukon gold potatoes chopped into bite-sized pieces
Green onion – finely chopped, to taste
¼ cup fresh dill chopped
1 celery stalk (optional if you want a little crunch)
1/3 cup mayonnaise
1/3 cup sour cream
2 tablespoons Dijon mustard
Kosher salt and ground pepper to taste
Scrub your potatoes to remove dirt. Chop into bite-sized pieces (about 1 inch). Place potatoes in large pot of water and bring to a boil. Make sure you salt the water for great flavor. Check after about 8 minutes that they are soft (not overly soft) and should be done after no more than 14 minutes. Drain and allow to fully cool.
While potatoes are cooling, whisk together mayo, sour cream and Dijon mustard. In a large bowl place the cooled potatoes, chopped chives, celery (optional) and fresh dill. Gently add the dressing to the potatoes until they are well coated and to your preferences. Lightly season with salt and fresh ground pepper. Enjoy!
