Red/Purple/Green Bean Salad with Basil, Balsamic and Parmesan

1/2 – 1b trimmed purple, red or green beans

1/4 cup finely chopped green onion

2 tablespoon balsamic vinegar

4 table spoon olive oil

½ cup chopped fresh basil

¾ cup grated Parmesan cheese

Salt and pepper to taste

Blanch green beans by bringing a large pot of salted water to a boil. Add green beans to water and blanch only for about 2 minutes. Remove and shock in cold ice water. Toss green onion, balsamic, beans and parmesan. Sprinkle with Olive oil and toss to coat.  Top with salt and freshly ground black pepper. Enjoy!
