
7 cups rhubarb, diced
¾ cup sugar
1 tsp. cinnamon
2 tblsp. Whole grain flour
¾ cup Earth Balance (butter)
¾ cup whole grain flour
1 cup brown sugar
1 cup oatmeal
Preheat oven 350. Clean rhubarb with water, chop and place in a 9X13 baking dish. Sprinkle sugar, cinnamon, salt and 2 tbl flour over the rhubarb. To make the topping, in a separate bowl, cream together Earth Balance, ¾ c whole grain flour and brown sugar. Stir oatmeal into the mixture. Sprinkle the topping mixture over the rhubarb. Bake for about 45 minutes to an hour. Serve warm with ice-cream or enjoy alone!
