Tomato Onion Avocado Salad

3-4 fresh large tomatoes

1/2 red onion sliced

2 avocados cut into bite size chunks

1/4 cup fresh parsley

1 garlic clove minced

1/2 cup chickpeas (optional)

2 tsp dried oregano

red wine vinegar

extra virgin olive oil

fresh ground black pepper

salt

On serving platter stack tomato, red onion, avocado.  Sprinkle with parsley, garlic & oregano. Drizzle red wine vinegar and olive oil.  Sprinkle salt & pepper.  If making ahead for a potluck, wait to cut tomato and avocado before placing on the platter right before eating. (Source: http://www.simplyrecipes.com)
